Ingredients for the filling:
2 cod fillets
1 tin white beans
1 tin chopped tomatoes
1 onion
1 carrot
8 - 10 cherry tomatoes
1 clove garlic
1 tsp paprika
Juice of 1/2 lemon
A handful of fresh basil
A handful of fresh parsley
Handful of spinach
Method:
Dice the fish and finely dice the onion, garlic, carrot, tomatoes, and herbs.
Sauté the onion until translucent then add the garlic and carrot. Cook until the carrot begins to soften.
Add the tinned tomatoes, cherry tomatoes, and paprika. Bring to a simmer then add the beans and fish.
Cook on low heat for 10-15 minutes until the fish is just cooked.
Add the herbs, spinach, and lemon juice.
Top with the mash and a sprinkle of cheese and bake for about 20 mins, until the cheese is golden.
